You make some good points Veritas.
The ARES bi and tri-planes are more then just WW1 level aircraft.
Their body frame and performance capabilities are closer to the high-end racing planes of the mid-30's. Plus they have steam powered afterburners that they can ignite for extra performance enhancement.
But still they'd be no match in a "fair fight", but Richthoffen is a shifty strategist and has a few tricks up his sleeve to level out the odds.
In the end, we think the multi-winged planes just look cooler and add a retro syle/sense to the movie.
As to why Earth didn't just adapt the Martian Wing tech? Well, I'd say that the Martian's are using some kind of anti-gravity tech that is currently beyond our abilities to retro-engineer.
The same with the Tripods, really. Our lumbering ARES mecha are very different from the more elegant Martian 'pods. And they use a different power source from the Martians with their steam/diesel engines vs. the Martian's "mysterious" power plants. Efforts to dissect the Martian reactors has led to some "unfortunate" events over the years like the Disaster at Manchester, where the city was obliterated in a horrendous explosion, marked by a unique "mushroom cloud".
